Today, Bastille Day, which means day off in France - days off I should say since pretty much everybody is taking Friday off too to make a long weekend... hey, it's France! ;-)
I am sharing with you a typical
apéro/ appetizer dish from Provence:
la tapenade or olive pesto.
To prepare the tapenade, you will need:
250 g pitted olives
3 anchovy fillets
1 teaspoon of capers
2 garlic cloves
Olive oil
1 handful of basil leaves
- Put all ingredients in a blender and mix until a smooth paste, gradually adding olive oil.
- Stir occasionally with a spoon. The texture should not be completely smooth, but granular, to express the full flavors and aromas.
- Spread on fresh bread [also divine as a base for homemade pizza]
